Mature coconut is the brown, hard-shelled coconut common across Asia and the tropics. Inside the woody husk lies firm white meat, dense and grateable, nothing like the soft, gelatinous flesh of a young green coconut. Crack the shell, chip out the meat with a coconut tool or sturdy knife, then grate, slice, or blend it for coconut milk, coconut cream, curries, desserts, and fresh kitchen use.
